Between cahors and soturac, the vineyard of cahors - a guaranteed vintage- is situated in the mid-lot valley, which has silicious terraced rows on its hillsides, and on its bordering plateaux, composed of limestone of the secondary or tertiary geological eras. In order to study and do a cartography of the + terroirs ; in the 45 rural districts which include the area concerned (a project commissioned by the local and national authorithies), we defined a scale comprising twelves criteries for differenciating the +terroirs ;; this enabled us to describe and do a cartography of them on a scale of 1/25 000. This epistemological and applied approach led us to extend our research by following three main lines: - an extensive study of the +terroirs ; by taking soil samples, which was consequently furthered by soil analyses and they showed the differenciation between the various +terroirs; according to their soil; - a study of the area's topoclimates, by examining the daily temperatures according to each + terroir ;, and by elaborating a numerical model of ground which enabled us to examine the shadows cast according to the slopes or the exposure; - a study of the links between each + terroirs ; and the qualities of the wine over five years, either by tasting them or making chemical analyses of the microvinifications, which showed that there is a hierarchy between the + terroirs ;. Those extensions of our study confirmed both the cartography we had made, and the individual character of each + terroir ;, which we called the + fait terroir ;. Finally, one of the outcomes of our research consisted in studying the possibility to award an appellation + first-class cahors vintage ; on the scale of the patch, which would boost the cahors appellation. This section of our research enabled us to compile a database which could lead to the creation of a geographical information system.

Entre cahors et soturac, le vignoble d'appellation d'origine controlee cahors se situe dans la moyenne vallee du lot, a terrasses etagees siliceuses, et sur ses versants et plateaux bordiers partages entre les calcaires des eres secondaires et tertiaires. Pour etudier et cartographier les terroirs des 45 communes qui englobent l'aire (a la demande des instances viticoles locales et nationales), nous avons defini une grille de douze criteres de differenciation des terroirs qui nous a permis de les decrire et de les cartographier au 1/25 000. Cette approche epistemologique et appliquee nous a amene a prolonger notre recherche suivant trois axes : - une etude affinee des terroirs par fosses et sondages, qui a conduit a un approfondissement a l'aide d'analyses pedologiques et montre la differenciation des terroirs par leur sol, - une etude des topoclimats de l'aire, par l'examen des temperatures quotidiennes en fonction des terroirs, par l'elaboration d'un modele numerique de terrain (mnt) permettant l'examen des ombres portees en fonction de la pente et de l'exposition, - une etude des rapports entre terroirs et qualites des vins sur cinq annees, par degustations et analyses chimiques de microvinifications, qui montre une hierarchie entre les terroirs. Ces prolongements ont confirme notre cartographie, l'individualite de chaque terroir, ce que nous avons appele le fait terroir. Enfin, un des aboutissements de nos recherches a consiste en l'etude, a l'echelle de la parcelle, des possibilites de reconnaissance d'une appellation +premier cru cahors ;, qui peut donner un nouvel elan a l'appellation cahors. Ce volet de recherche a permis de construire une base de donnees qui peut etre a l'origine d'un systeme d'information geographique.
