This dissertation undertakes the study of olive oil extraction from the point of view of cultural processes anthropology. Field work results have allowed the study, the classification and the cartography of more than 340 oil press. On one side the dissertation tries to reconstitute oil press way of functioning and to study the role of these installations in creating social links in the traditional lebanese society. We suggest in particular new data on the genesis of an original hydraulic system, the matruf, which does not crush the stones. On the other side, the dissertation goes back to the main stages of technological changes in Lebanon from the Middle Ages until today. This dissertation represents the first overall study on the olive oil work in Lebanon.

La thèse étudie du point de vue de l'anthropologie culturelle les procédés d'extraction de l'huile d'olive au Liban. Une enquête de terrain a permis de recenser plus de 340 pressoirs qui ont été classés, étudiés et cartographiés. On reconstitue leur mode de fonctionnement et l'on étudie le rôle de ces installations comme créateur de lien social dans la société traditionnelle libanaise. On propose en particulier des données nouvelles sur l'origine d'un système original, le matruf, qui n'écrase pas les noyaux. On retrace, d'autre part, les grandes étapes des changements technologiques intervenus au Liban du Moyen Age à nos jours. Ce travail constitue la première étude d'ensemble sur le travail de l'huile d'olive au Liban.
