In mexican historiography one widely held thesis is that the agriculture at the end of the 19th century was rudimentary, backward and almost without any technological innovation as concerning crops destined towards internal markets. From the present study, we could see that for the haciendas of chalco and of morelos, during the period 1880-1914, a series of technological changes had in fact taken place in the cultivation of wheat and sugar canne, and subsequent transformations of these crops, both destined essentially towards internal markets.

Dans l'historiographie mexicaine il existe une these tres repandue selon laquelle l'agriculture de la fin du siecle dernier etait rudimentaire, arrieree et presque sans innovations techniques pour ce qui concerne les cultures destinees au marche interne. Mais nous avons pu constater que pour les haciendas du district de chalco et de l'etat de morelos entre 1880 et 1914, une serie de changements techniques avaient eu lieu dans la culture et la transformation du ble et de la canne a sucre, toutes deux destinees pour l'essentiel au marche interne.
